When I dreamed up this tasty concoction, I via method of no approach imagined it's going to fashion this correct.  Don’t get me incorrect, I predicted a yummy burrito, but there may be anything about this mixture of meals that truly works.  Not essentially does it work, it's past pleasurable.  Sometimes I’ll have a vegetarian dish for dinner and surely experience hungry lower back an hour or NULL later.  Not this one!  It was so filling, but latest and wholesome.  Try it for your subsequent meatless Monday!

INGREDIENTS


For the rice:
2 cups raw brown rice, rinsed
three cloves minced garlic
1/2 cup chopped cilantro
zest of one lime
juice of 1 lime
salt to taste
For the vegetables:
3 russet potatoes, peeled and diced
3 bell peppers, diced
1 yellow onion, diced
15 ozcan black beans, worn-out and rinsed
3 T olive oil
2 cups low sodium bird broth or vegetable broth
6 oz.tomato paste
four T chili powder
1 tsp cumin
salt to taste
Other fixins:
eight Whole wheat or gluten free tortillas
2–3 cups Shredded monterrey jack cheese (non-obligatory)
Avocado (optional)
Sour Cream (optional)

INSTRUCTIONS

Bring 4 1/2 cups of water to a boil, add in rice and garlic. Cover and simmer on low for approximately 40 mins, or until rice is delicate and water is dissolved. Once rice is definitely cooked, stir in cilantro, lime zest, juice and salt.

While the rice is cooking: In a large skillet, saute onion and bell pepper in olive oil till pretty gentle. Add potatoes, black beans, hen broth, tomato paste, chili powder, cumin, and salt. Bring aggregate to a boil, partially cowl, and simmer till potatoes are fork tender, approximately 20-half-hour depending at the dimension of the potato chunks. Stir it a couple instances while it is cooking to make sure all the potatoes put together dinner lightly.
